Recipe - Lancashire Hotpot

500gms lamb leg steak
vegetable oil
2 baking potatoes
1 carrot
i onion
3 cloves garlic
1pt vegetable stock
2tsps of cornflower
2 bay leaves
salt & black pepper


Fry off the garlic and onions in vegetable oil and cut the lamb into small pieces, seal the lamb in the same pan as you fried the onions. Deglaze the pan with the cornflower and add the vegetable stock, bring to the boil and then remove from the heat.
Slice the potatoes and line the bottom of a casserole add fresh basil, salt and ground black pepper. Add half the onions & garlic and half of the sliced carrot and season. Put in 1 bay leaf and top with half of the lamband sprinkle with thyme. Repeat amd finish with a layer of potato. Pour over the stock. Melt a large knob of butter and pour over the top. Season and add fresh basil.
Put the casserole lid on and place in a moderate oven, 170 degrees C, for 2 hours removing the lid for the last half hour to brown the top. Then serve.

In my experience this will serve 5/6 meals.
