Simple done well is sometimes the best: Recipe

Roasted vegetables

 Roasted vegetables with topside of beef cooked medium rare.

I am not about to dwell on the protein part of this meal. The roasted vegetables can accompanying absolutely anything and tomorrow it will be fried egg on toast.

Ingredients (serves 1)

1 tbsp of olive oil (I used chilli flavoured)
1 leek
1 carrot
1 parsnip
1/4 red pepper
2 small florets of calibrese
1 medium sized floret of cauliflower


This really couldn't be easier. Pre-heat the oven to a moderate heat 175f Gas mark 4/5. Apart from the cauliflower and calibrese which should be left whole cut the vegetables up into batons and place in a roasting tin. Drizzle the olive oil over the vegetables and season and place in the centre of the oven covered with baking foil. The vegetables should be left in the oven for around 45 minutes having been stirred on a couple of occasions.

Other Stuff

Some interesting and useful information from the tribe over the weekend. I signed up to and and have seen an increase in traffic to my blog which is great.

I was totally inspired by the confidence of youth on Saturday evening. I attended a concert at my church given by a local band drawn from schools in the locality and ably supported by peripatetic music teachers. In the past I have attempted to produce a sound from a trumpet and I have sung in numerous shows and concerts but almost as a quivering wreck. These teenagers were amazing. The trumpeter was brilliant and included some improvisation and the girl who sang solo was awesome and both were nerveless. There were similar brilliant solo performances from various sections of the band and all members seemed relaxed and confident in their role. Fantastic!
