A Tuesday Recipe - David's Big Soup

 David's Big Soup

2 large carrots
2 medium sized onions
1 glove garlic
fistful of haricot beans
large handful of new potatoes
meat - beef, lamb or chicken about 400g
125g butter and 2tbsp sunflower oil (or similar)
salt and pepper
1 pint of water
+ whatever flavour you enjoy!
Chop the garlic and fry in the melted butter and oil with the roughly chopped onion. When translucent add the diced meat and seal on all sides. Add the roughly chopped carrots and bite size potatoes and ensure the vegetables are covered with oil/butter. When all the ingredients are well coated and sealed, season and add a pint of boiling water, bring the whole potful to the boil and simmer for 20 minutes. Add the haricot, they don't take that long, near the end of cooking.
Next comes your own personal flavour choices. This is a good basic and quite healthy meal - go steady on the salt and butter! However, on its own it may be a little bland, I like strong tastes so mine became a Japanese style curry with the use of Vermont curry mix with apple and honey and a squeeze of wasabi paste, all purchased from the (link at the side).
