By boiling the joint first with onions, carrots etc it helps to retain the moisture if re-heating later. I have actually produce three other meals plus sandwiches from this joint, so although initially it seemed expensive at £4 for a small piece of meat, it actually fed me well.
The vegetables I try to make as interesting as possible by roasting in olive oil and with various seasonings - Experiment!

One very pleasing aspect of buying cards is the increasing number of shops and supermarkets that are stocking charity cards. To me buying them seems less of a waste of money and very appropriate for the season.
