A Tuesday Recipe - Mince Hot Pot

This is one of those meals that is very easy if you need to stick something in the oven for lunch or dinner. The recipe came from the town of Kirk Merrington, County Durham in the north east of England. I found it in an old recipe book published by the Women's Institute in the 1950's or thereabouts. 

Kirk Merrington is a village in County Durham, in England. It is situated between the towns of Bishop Auckland and Ferryhill. It is part of the Spennymoor township.

The recipe is quite basic but I brought it up to what I like by  introducing garlic with the onions, frying off the mince, adding oregano, and basil for the potatoes. I also brushed melted butter on the top to give the golden finish to the dish. Its quite tasty when served with a green vegetable.
