A Tuesday Recipe - Mother's chocolate praline.

In memory of mum who died October last year and would have been 91 today!

This very simple recipe was made by mother for me as a child and then for her grandchildren.

4oz margarine
4oz granulated sugar
100g of rich tea biscuits
1 egg
1tbsp cocoa
1/2tsp mixed spice
250g chocolate for the topping.

Melt the margarine, sugar and cocoa in a pan, do not boil. When melted remove from the heat and stir in the egg, whisking quickly and the mixed spice. Fold in the biscuits which you have rendered into crumbs using a rolling pin. Press the mixture into a lined or greased baking tin and 'cook' in the fridge. Meanwhile melt the chocolate over a bain marie and pour over the cooled base and leave to cool in the fridge for at least 2 hours.


Love of Mother

In the beginning then it was easy
everything needed readily supplied
Open mouthed baby demands filled freely
nought ordinarily would be denied.
Time passes and demands are high-reaching.
Love is constant and needs fulfilled with heed.
Teenagers pursue love as when suckling
their methods are somewhat peer decreed.
Dotage continues but turns things around
donator of tenderness - her needs turned.
Previous recipients must propound
to her the devotedness of life learned.

What goes around comes around so they say
To portion your love we hopefully pray
