Curried belly pork with rice.
Yet another curry for another busy weekend. I was looking for something inexpensive and quick so before I went shopping I tuned in to one of many TV chefs. The surprising thing was that it was Paul Hollywood's Pies and Puds so a strange source for a curry. In fact he was looking to make a curry pastie and consulted a group of Indian ladies in Edinburgh who had opened their own restaurant. The ladies were the chefs and they produced their own personal specialties on a shift basis. One of the recipes was for the belly pork curry.
There are a variety of ways of preparing this dish. Some recommend marinading the meat in the spices overnight; if you follow a Thai recipe it will have coconut milk and lemon grass; but, you can just get on with it if that is your thing.
The full recipe is on the appropriate TAB at the top of the page.
The collection is being offered as one of Amazon's Christmas Deals at less than £2. Try the following link. You may have to paste it into your browser. Or just search Amazon under the title or my full name as it appears on the book cover.
