A Tuesday Recipe - Belly Pork Curry and writing news.

Curried belly pork with rice.

Yet another curry for another busy weekend. I was looking for something inexpensive and quick so before I went shopping I tuned in to one of many TV chefs. The surprising thing was that it was Paul Hollywood's Pies and Puds so a strange source for a curry. In fact he was looking to make a curry pastie and consulted a group of Indian ladies in Edinburgh who had opened their own restaurant. The ladies were the chefs and they produced their own personal specialties on a shift basis. One of the recipes was for the belly pork curry.
There are a variety of ways of preparing this dish. Some recommend marinading the meat in the spices overnight; if you follow a Thai recipe it will have coconut milk and lemon grass; but, you can just get on with it if that is your thing.
