Luxury Fish Pie
I have published fish pie recipes on previous occasions and simply to make the basic pie you use fish (how astute am I?), parsley sauce, and a potato topping. However, if you're feeling adventurous there are a variety of enhancements and the one I produced last weekend was laden with such.
In with the smoked haddock and cod, I added large cooked and peeled prawns, finely chopped and fried onion, frozen peas, and hard boiled egg. For the potato topping I mashed the potato with creme fraiche, more onion and Gruyère cheese with some extra Gruyère grated on top.
The pie I then served with sautéed asparagus and if I say so myself, it was delicious.
