Tuesday Food Blog - Stir fry frittata

The simple frittata could be one of the healthiest easy meals that can be created in a relatively short time. If you are happy eating eggs, and there are many healthy reasons to do so, then the addition of vegetables and cheese can only enhance such a meal.

Frittata

Ingredients

3 eggs
Stir fry vegetables - as much or as little as you like
Olive oil for cooking
garlic salt
onion
1 tbsp light soy sauce
grated cheese for the top
salt and pepper to taste

Method

Pour oil into a frying pan and fry the onion until soft, season and add garlic salt. Add the stir fry vegetables and cook on a high setting for 5 minutes stirring frequently add the soy sauce. 
Beat the eggs in a bowl, season and then pour over the vegetables. Cook on high for 2 minutes and then simmer for 20 minutes on a low setting. 
Sprinkle on the grated cheese and place under a hot grill until the cheese browns.

Serve

This is a very tasty meal that is quick to prepare and can contain your five-a-day - you have control.
