I like my comfort foods and currently that is chilli, regulars will have noticed. This week I actually planned ahead to make a spicy shepherd's pie but gave it the alternative name as seen above. It is another easy recipe.
Mexican Goatherd's pie
250g minced beef
1 onion, chopped
2 chillies, chopped
2 cloves garlic
2 tsp chilli powder
1 tbsp tomato puree
3 squares dar chocolate
1/2 pt gravy
1 tin red kidney beans
Baby new potatoes, par boiled, and sliced
Begin by frying off the onions and seasoning them then add the garlic. Fry for two minutes. Add the mince and brown thoroughly then stir in the tomato puree and the chillies and chilli powder. Add the kidney beans and any other extras you may wish then pour over the gravy. Bring to the boil then turn down to a simmer and add the chocolate squares and simmer for 20 minutes.
Preheat the oven to 200 degrees C.
While the chilli is simmering boil the potatoes for 10 - 15 minutes then drain and slice.
Pour the chilli mince into an ovenproof dish and cover with the sliced potato. Drizzle oil over the potatoes and season with salt and black pepper. Place in the oven for 20 minutes or until the potatoes have browned.
