Tuesday Food Blog - Hash brown casserole

I described this meal to my daughter and she said that it sounded like student fayre. I know what she meant I just hope that the addition of peppers and onions lifts the quality.


500g chicken breast, diced
1 onion, chopped
1 green pepper, chopped
150g button mushrooms, sliced
2 cloves garlic, sliced
frozen hash browns, enough to make a layer in the bottom of the casserole
1 14 oz can chicken soup
1/2 the same can of milk
300g grated cheddar
oil for frying
salt and pepper


Preheat the oven to 175 C, 350 F
Allow the hash browns to defrost overnight.
Fry the onions and pepper for 5 - 7 minutes then add the garlic and fry for 2 more minutes. Add the chicken and stir until it turns white then add the sliced mushrooms. Pour into the casserole on top of the potatoes.
Pour the soup and milk into a bowl, season and stir. Then stir in a third of the cheese and pour over the vegetables and chicken. Sprinkle the remainder of the cheese and put in the oven for about 30 minutes.

Serve with greens or salad.
